Stilton Cheese can refer to either Blue Stilton or White Stilton. Blue Stiltion, is the Blue Cheese variant, and White Stilton is the white variant. The original cheesemaker of Stilton Cheese is unknown. Stilton Cheese is the only British cheese to have recieved legal protection, and Blue Stilton is often sold as Britsh Blue Cheese.
Blue Stilton is today made from pasturized milk locally sourced from counties including and surronding the only towns authorized to make the cheese, which are: Derbyshire, Leicestershire and Nottinghamshire. The blue veins of the cheese are creted by pushing steel needles into the crust of the cheese.
